What you’ll need:

Keto bread is perfection for French Toast. The almost flour and coconut flour blend for a perfect breakfast bread with fewer carbs.

Cinnamon is key in the bread making as well the process to make the bread French-tastic for breakfast. In my childhood French Toast, cinnamon was the magical ingredient.

Ingredients

Keto Bread

To Make French Toast

  • 2 large eggs
  • 3 Tablespoons unsweetened almond milk ( or full fat coconut milk or heavy cream)
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • 1 small bit of butter for skillet

Instructions

To Make Keto Bread

  • Preheat oven to 375 degrees F. Line a standard bread loaf pan (see video for reference) with parchment paper.

  • In a medium mixing bowl, whisk together all of the ingredients until well combined.

  • Pour the batter into the loaf pan and "tap/drop the pan" from about a 1/2 inch height onto your counter top a few times to work the air bubbles out of the batter. Regardless of the size of your loaf pan, don't fill it more than 3/4 of the way full. Bake for 30 minutes, or until toothpick comes out clean. Allow loaf to fully cool before slicing.

  • Slice in 1 inch thick slices.

To Make French Toast

  • In a large bowl whisk together eggs, milk, ground cinnamon and salt.

  • Quickly bread slices into mixture and be delicate as the slices can be a bit delicate. Allow the bread slices to asborb as much of the egg mixture and place into medium-high heat skillet. Fry both sides until golden brown and enjoy immediately with some bacon, low carb fruit and low carb syrup.

      So when it comes to the keto bread. I personally enjoy the psyllium husk version a tad bit more myself. But as you see many people have made this version with the coconut flour and have enjoyed it. So if you don’t have it no worries and go ahead and follow the recipe in this post. 🙂

      We’ve honestly only have ever done one day in the fridge. I’ve never stored it any longer than that. Safety wise I don’t see why a few more days would be not safe but not really sure about taste wise days later. The next day is fine though.

      We actually don’t recommend vegetable oil. We link the oil to coconut oil in our recipe card. So you can 100% use coconut oil or a light olive oil is what we recommend.

      Yes that it correct! We try to limit our sugar alcohols when we can so for this recipe we knew we were going to have sugar-free syrup and therefore didn’t add any into the french toast mix. You are more than welcome to add 1-2TBS of syrup into the mix if you’d like, it’ll just sweeten it a bit.
