How to Make Baked Oatmeal Bars
Here are the instructions for making the Blueberry Baked Oatmeal Bars:
Preheat your oven to 350°F (175°C). Grease or line a square baking dish with parchment paper and set it aside.
In a large mixing bowl, combine the mashed ripe banana, maple syrup, vanilla extract and non-dairy milk. To the same bowl add the old-fashioned rolled oats, cinnamon, nutmeg, and baking powder. Mix well until all ingredients are evenly incorporated. You should have a thick, but pourable batter-like consistency.
Gently fold in the fresh blueberries and any optional add-ins you desire, such as chia seeds, hemp seeds, ground flax, or chopped nuts.
Pour the mixture into the prepared baking dish, spreading it out evenly with a spatula. For the perfect bite sized for little hands, I like to sometimes bake these bars in Souper Cubes 2 Tbsp Silicone Freezer Tray.

Remove from the oven and allow the oatmeal bars to cool in the baking dish for 10-15 minutes.Once cooled, carefully lift the bars out of the baking dish using the parchment paper and transfer them to a cutting board. Slice into individual bars or squares. If you baked these in the Souper Cubes, you won’t have to worry about cutting them into squares. Simply pop them out and store in an airtight container or leave them in the cubes and freeze.
